Indian Vegetable Soup

This makes a great vegetarian meal. The amount of ginger gives it a sneaky sort of spiciness. I prefer the mild curry powder, but if you want something even hotter, you could use the hot curry.

1 eggplant, peeled and cubed

1 pound (455 g) potatoes, cubed

2 cups (480 g) no-salt-added canned tomatoes

1½ cups (246 g) precooked chickpeas

1 cup (160 g) coarsely chopped onion

1½ teaspoons curry powder

1½ teaspoons ground ginger

1 teaspoon coriander

¼ teaspoon black pepper

4 cups (950 ml) low-sodium vegetable broth

In a slow cooker, combine the vegetables. Sprinkle spices over top. Pour broth over all. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.

Yield: 6 servings
